food me not

i was reading through the Hotels ala Carte (Asia-Pacific) Recipe Book 2003 last nite.
realized there were certain things i don't like to eat.
as much as my taste buds are rather adventurous... there're certain ingredients they don't enjoy.

1) Chicken Liver Parfait.

i do not like any organs. pork liver, chicken liver, fish liver.... no, no offals for me, thank you.
no, not Kway Chup too. eeee.... pig's offals. no, no mutton or lamb as well. too strong smell...
yes, even Foie Gras ala one of the most expensive food. it is STILL goose liver.
Foie Gras if overcooked taste hard chewy and rubbery. nothing any gastronomers would appreciate.

anyway, for those who love poultry liver, pair the poultry liver parfait with Grenache (red wine).
accompanied by some fresh greens and crackers with poppy seeds. beautiful.
when cooking poultry liver, do wash them thoroughly and pat dry carefully.
seperate the 2 lobes and remove any veins and green blemishes with small sharp knife.
rinse and pat dry again before cooking.

2) Escargot.

escargots belong to 2 types of edible snails.
Helix Aspera, a small grey snail or Helix Pomotia, a larger roman snail.
i like neither one of them...
these snails are farmed. and snails itself do not have a distinctive taste.
therefore, they taste like Turkey, very bland.
hence, it is the strong ingredients that bring out their flavour.
so why bother to pay so much?
they're tasteless and chewy. not exciting...

anyway, for those who want to give escargot a try. this is how.
buy frozen escargots at supermarkets or gourmet food outlets.
prepare a strong flavoured herb butter.
soften the butter and infuse it generously with fresh herbs such as oregon, rosemary, terragon and thyme. add in minced garlic. fill up the escargot shell.
bake them in a ceramic snail plate.

3) Fast Food.

i am a non-fast food person. i advocate for slow foods.
these are a few reasons.

fast foods are pre-prepared and pre-cooked.
they are high in sodium, MSG, artificial colorings and preservatives.

soft drinks are high in refined sugar and carbon dioxide.
excessive sugar leads to not just obesity, but also diabetis.
carbon dioxide gets dissolved in your blood stream and acucmulates in your bones.
this causes the bone marrow to lose density, despite the fact that even if you take in calcium...
carbon dioxide gets trapped in between the bone marrow spaces thus makes you more susceptible to osterperosis during old age.

french fries are saturated in poly-saturated fats.
meaning, these vegetables oils they use are hydrolysed to the max... saturated with hydrogen.
although it claims to use vegetable oils, their chemical properties resemble that of animal fats.
thus, carries all the inherent ill health effects of animal fats.

fast food culture doesn't respect food preparation.
the food is not being prepared painstakingly, it doesn't impart any natural flavourings...
neither does fast food reflect the rich tradition and culture of the locality.
i respect my food.
